What’s Cookin in the Kitchen with Sam Evian

WHEN HE’S NOT MAKING MUSIC - the songwriter hones in on his cooking skills alongside musical girlfriend Hannah Cohen with a fun recipe that will keep you cozy this winter.

The recording studio isn’t the only room in which Evian and Cohen find themselves immersed in the process of creating something. The creative couple is based in New York, a city of takeout and happy hour culture where if you have any time available to make a home-cooked meal, it’s considered a luxury. So when we spoke to Evian with the intention of covering his most recent album release, we were delighted to learn about his passion for cooking and learn a recipe that will warm you up this winter like it did for us. So grab a loved one and spend some quality time in the kitchen.

Chicken and Dumplings:

This isn’t necessarily a healthy or beautiful meal, but it’s super cozy and fun every now and then.

Ingredients:

  • Chicken thighs

  • Onions

  • Leeks

  • Celery

  • Chicken stock

  • Flour

  • Eggs

  • Salt

  • Butter

  • Fresh herbs (thyme, sage, etc.)

  • Guinness

1. Brown chicken thighs in a dutch oven.

2. Caramelize onions, celery and leeks in a sauté pan. Add to dutch oven.

3. Deglaze with Guinness.

4. Add chicken or vegetable stock to the dutch oven. Bring to a simmer. 

5. Skim the fat from the top and collect it in a bowl. If you’re feeling really sassy, add a little flour and whisk into a rue, and re-incorporate that back into the soup. 

6. Make dumpling dough. 

7. Fry sage and thyme lightly in some butter. Mix the butter and the fried herbs into the dough. 

8. Spoon the dough onto the soup and cover to cook for about 10 mins. 

9. Serve immediately!
